  • 0.25 tspcumin
  • 2 cuplong grain white rice, rinsed
  • 3 cupvegetable broth
  • 1 tspsalt
  • 0.5 tspblack pepper, freshly ground

  • 0.25 cupcilantro, fresh, chopped(optional)

The method

    Heat the olive oil in a large pot or Dutch oven over medium heat.

    Add the yellow onion and red bell pepper to the pot and cook until softened, about 5-7 minutes.

    Stir in the garlic and cook for another minute until fragrant.

    Pour in the tomato sauce, pigeon peas, bay leaf, dried oregano, and cumin. Stir to combine.

    Add the rinsed long grain white rice to the pot and stir to coat all the grains with the sauce.

    Bring the mixture to a boil, then reduce the heat to low, cover the pot tightly, and simmer for 20-25 minutes, or until all the liquid has been absorbed and the rice is tender.
