batter

  • 125 gall-purpose flour
  • 100 ggranulated sugar
  • 1 tspbaking powder
  • 1 pinchsalt
  • 120 mlmilk
  • 30 gunsalted butter, melted, plus extra for greasing

topping

  • 300 gmixed berries, fresh or frozen
  • 50 ggranulated sugar

Ingredients

  • 240 mlboiling water

Equipment

spatula · mixing bowl · whisk · oven · baking dish

The method

Step by step

  1. 1

Preheat your oven to 200°C (400°F) and grease a 20cm (8-inch) square or round baking dish.

    About 2 min

Cook’s note: A deeper dish works best to contain the sauce that forms at the bottom.

  2. 2

In a medium bowl, whisk together the all-purpose flour, the batter portion of granulated sugar, baking powder, and salt.

    About 2 min

  3. 3

Pour the milk and melted butter into the dry ingredients and stir just until a thick batter forms. Do not overmix.

    About 2 min

Cook’s note: A few small lumps are okay; overmixing can make the pudding tough.

  4. 4

Spread the batter evenly across the bottom of your prepared baking dish.

    About 1 min

  5. 5

Scatter the mixed berries evenly over the top of the batter.

    About 1 min

Cook’s note: If using frozen berries, do not thaw them first.

  6. 6

Sprinkle the remaining topping portion of granulated sugar over the berries.

    About 1 min

  7. 7

Carefully and slowly pour the boiling water over the entire surface. Do not stir.

    About 1 min

Cook’s note: Pouring over the back of a spoon helps distribute the water gently without disturbing the layers.

  8. 8

Bake for 30-35 minutes, or until the pudding top is golden brown and a skewer inserted into the cakey part comes out clean.

    About 35 min

  9. 9

Let the pudding rest for at least 5 minutes before serving. The sauce will thicken slightly as it cools.

    About 5 min

Cook’s note: This is delicious served warm on its own or with a scoop of vanilla ice cream.
