The method

Step by step

  1. 1

In a medium bowl, combine the pork shoulder, fish sauce, soy sauce, sugar, minced garlic, and black pepper. Mix well and let marinate for at least 30 minutes, or preferably longer in the refrigerator.

    About 30 min

Cook’s note: For best flavor, marinate the pork for several hours or overnight.

  2. 2

For the pickled vegetables, combine the julienned daikon radish and carrot in a heatproof bowl.

  3. 3

In a small saucepan, bring the rice vinegar, sugar, and water to a simmer, stirring until the sugar dissolves. Pour the hot liquid over the daikon and carrot.

    About 5 min

  4. 4

Let the pickled vegetables cool to room temperature, then refrigerate until ready to use.

    About 15 min

  5. 5

Preheat a grill or grill pan to medium-high heat.

    About 5 min

  6. 6

Grill the marinated pork slices for 2-3 minutes per side, or until cooked through and slightly charred.

    About 10 min

Cook’s note: Avoid overcrowding the grill for even cooking.

  7. 7

Slice the baguettes lengthwise, but not all the way through, leaving one side attached.

    About 1 min

  8. 8

Spread mayonnaise generously on both cut sides of each baguette.

    About 1 min

  9. 9

Fill each baguette with grilled pork, sliced cucumber, a generous amount of drained pickled vegetables, fresh cilantro, and optional sliced jalapeño.

    About 2 min

Cook’s note: Adjust the amount of jalapeño to your spice preference.

  10. 10

    Serve immediately.
