  • 240 mlchicken broth, low-sodium
  • 240 mlsour cream, full-fat

The method

Step by step

    Preheat your oven to 190°C (375°F).

    Pat the chicken breasts dry and season them generously on all sides with salt, black pepper, and paprika.

    Heat the olive oil in a large skillet over medium-high heat until it shimmers.

    Add the chicken to the hot pan and sear for 3-4 minutes per side, until golden brown.

    Cook’s note: Don't overcrowd the pan. Sear in batches if necessary. The chicken will not be fully cooked at this stage.

    Reduce the heat to medium, add the butter to the skillet, and once melted, add the chopped onion. Sauté for about 5 minutes until softened.
