The method

Step by step

    In a medium saucepan, combine the water, butter, granulated sugar, and salt for the churros. Bring the mixture to a rolling boil over medium-high heat, stirring until the butter is melted.

    Remove the saucepan from the heat and immediately add the all-purpose flour. Stir vigorously with a wooden spoon until a smooth ball of dough forms and pulls away from the sides of the pan.

    Transfer the dough to a large bowl and let it cool for 5 minutes. Beat in the large egg until fully incorporated and the dough is smooth and glossy.

    Spoon the churro dough into a piping bag fitted with a large star nozzle (about 1.5 cm opening).

    Pour the vegetable oil into a large, heavy-bottomed pot or deep fryer to a depth of about 5 cm. Heat the oil to 180°C (350°F).

    Carefully pipe 10-15 cm strips of dough directly into the hot oil, using kitchen scissors to snip the dough from the piping bag. Fry 3-4 churros at a time to avoid overcrowding the pot.
