  • 0.13 tspblack pepper

  • 2 tbspsalsa(optional)
  • 2 tbspsour cream(optional)

Equipment

large skillet · spatula · mixing bowl · cutting board · knife

The method

Step by step

  1. 1

In a medium bowl, combine the shredded chicken breast with chili powder, cumin, garlic powder, salt, and black pepper.

    About 2 min

Cook’s note: Ensure the chicken is evenly coated with the spices for best flavor.

  2. 2

Heat a large skillet or griddle over medium heat and add the olive oil.

    About 1 min

Cook’s note: A non-stick skillet works best for easy flipping.

  3. 3

Place one flour tortilla in the hot skillet.

  4. 4

Sprinkle half of the cheddar cheese and half of the monterey jack cheese over one side of the tortilla.

Cook’s note: Leave a small border around the edge to prevent cheese from oozing out.

  5. 5

Distribute half of the seasoned chicken over the cheese.

  6. 6

Place another flour tortilla on top, pressing down gently.

  7. 7

Cook for 2-3 minutes per side, or until the tortilla is golden brown and the cheese is melted and bubbly.

    About 6 min

Cook’s note: Carefully flip the quesadilla using a wide spatula.

  8. 8

Remove the cooked quesadilla from the skillet and repeat the process for the second quesadilla.

  9. 9

    Slice each quesadilla into wedges.

    About 1 min

  10. 10

Serve immediately with salsa and sour cream, if desired.
