  • 2 pcskiwi, peeled and sliced
  • 0.5 cupblueberry, rinsed
  • 170 gcanned mandarin orange, drained

Equipment

pizza pan · spatula · wire rack · mixing bowl · small saucepan · electric mixer · cutting board · knife · whisk · oven

The method

Step by step

  1. 1

Preheat your oven to 175°C (350°F).

    About 10 min

Cook’s note: Position a rack in the middle of the oven for even baking.

  2. 2

In a medium bowl, beat the softened butter and powdered sugar with an electric mixer until light and fluffy.

    About 2 min

  3. 3

Gradually add the all-purpose flour and mix on low speed until a soft dough forms.

    About 2 min

Cook’s note: Avoid overmixing the dough to keep the crust tender.

  4. 4

Press the dough evenly onto the bottom of an ungreased 12-inch (30 cm) round pizza pan.

    About 3 min

Cook’s note: Use your fingers or the bottom of a flat glass to get an even layer.

  5. 5

Bake for 15-18 minutes, or until the edges are lightly golden brown.

    About 18 min

  6. 6

Remove the crust from the oven and let it cool completely on a wire rack.

    About 30 min

Cook’s note: The crust must be fully cooled before adding the frosting, otherwise the frosting will melt.

  7. 7

While the crust cools, prepare the frosting by beating the softened cream cheese, granulated sugar, and vanilla extract in a clean bowl until smooth and creamy.

    About 3 min

  8. 8

To make the glaze, whisk together the cornstarch, optional sugar, pineapple juice, and water in a small saucepan.

    About 1 min

Cook’s note: Whisking before heating prevents lumps from forming.

  9. 9

Bring the glaze mixture to a simmer over medium heat, stirring constantly until it thickens and turns translucent, about 1-2 minutes.

    About 2 min

  10. 10

Remove the saucepan from the heat, stir in the lemon juice, and set aside to cool slightly.

    About 10 min

Cook’s note: The glaze will continue to thicken as it cools.

  11. 11

Spread the cream cheese frosting evenly over the completely cooled crust, leaving a small border.

    About 2 min

  12. 12

Arrange the sliced strawberries, kiwis, blueberries, and mandarin oranges over the frosting in a decorative pattern.

    About 5 min

Cook’s note: Pat the fruit dry with a paper towel before arranging to prevent a soggy pizza.

  13. 13

Gently spoon or brush the slightly cooled glaze over the fruit.

    About 2 min

  14. 14

Chill the fruit pizza in the refrigerator for at least 30 minutes to allow the glaze to set completely.

    About 30 min

Cook’s note: Chilling also makes it easier to slice and serve.
