Ingredients

Measurements

Converted for display; the recipe amounts stay equivalent.

  • 0.75 cupvegetable shortening, at room temperature
  • 1 cuplight brown sugar, packed
  • 0.5 cupgranulated sugar
  • 1 pcslarge egg
  • 60 mlwater
  • 1 tspvanilla extract
  • 1 cupall-purpose flour
  • 0.5 tspbaking soda
  • 0.5 tspsalt
  • 3 cupquick-cooking oats
  • 400 gwhole berry cranberry sauce

Equipment

baking pan · wire rack · spatula · mixing bowl · electric mixer · oven

The method

Step by step

  1. 1

Preheat your oven to 175°C (350°F). Lightly grease a 23x33 cm (9x13 inch) baking pan.

    About 2 min

  2. 2

In a large mixing bowl, beat the vegetable shortening, light brown sugar, and granulated sugar with an electric mixer until the mixture is light and fluffy.

    About 3 min

Cook’s note: Scrape down the sides of the bowl once or twice to ensure everything is evenly mixed.

  3. 3

Add the egg, water, and vanilla extract to the bowl and beat until everything is well combined.

    About 2 min

  4. 4

In a separate, medium bowl, whisk together the all-purpose flour, baking soda, and salt.

    About 1 min

Cook’s note: Whisking the dry ingredients together first helps ensure the baking soda and salt are evenly distributed.

  5. 5

Add the dry ingredients to the wet mixture and mix on low speed until just incorporated. Be careful not to overmix.

    About 2 min

  6. 6

Using a spatula, fold in the quick-cooking oats until they are evenly distributed throughout the dough.

    About 1 min

  7. 7

Press the oat mixture evenly into the bottom of the prepared baking pan. The back of a spoon or your fingertips can help create a level surface.

    About 2 min

  8. 8

Carefully spread the whole berry cranberry sauce over the oat base, leaving a small border of about 2cm (1 inch) around the edges.

    About 2 min

Cook’s note: Leaving a border prevents the cranberry sauce from burning onto the sides of the pan.

  9. 9

Bake for 25-30 minutes, or until the edges are golden brown and the center is set.

    About 30 min

  10. 10

Remove the pan from the oven and let it cool completely on a wire rack before cutting into squares.

    About 1 hr

Cook’s note: Allowing the bars to cool fully is essential for clean cuts and for the bars to hold their shape.
