Ingredients

Ingredients

  • 900 gpotato, peeled and grated
  • 1 pcsyellow onion, finely grated
  • 1 pcsegg
  • 2 tbspall-purpose flour
  • 1 tspsalt
  • 0.5 tspblack pepper, freshly ground
  • 0.5 cupvegetable oil

for serving

  • 0.5 cupsour cream(optional)
  • 2 tbspfresh dill, chopped(optional)

Equipment

grater · large skillet · paper towels · spatula · kitchen towel · large bowl

The method

Step by step

  1. 1

Grate the potatoes and the yellow onion into a large bowl.

    About 10 min

Cook’s note: Use a food processor for quicker grating.

  2. 2

Place the grated potato and onion mixture into a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible.

    About 5 min

Cook’s note: Removing excess liquid is crucial for crispy deruny.

  3. 3

Return the squeezed mixture to the bowl. Add the egg, all-purpose flour, salt, and black pepper.

    About 2 min

  4. 4

Mix all ingredients thoroughly until well combined.

    About 1 min

  5. 5

Heat the vegetable oil in a large skillet over medium-high heat. The oil should be hot enough that a drop of batter sizzles immediately.

    About 3 min

  6. 6

Drop spoonfuls of the potato mixture into the hot oil, flattening them slightly with the back of the spoon to form pancakes about 2-3 inches in diameter.

Cook’s note: Do not overcrowd the pan; cook in batches if necessary.

  7. 7

Cook for 3-5 minutes per side, or until golden brown and crispy.

    About 8 min

Cook’s note: Adjust heat as needed to prevent burning while ensuring they cook through.

  8. 8

Transfer the cooked deruny to a plate lined with paper towels to drain excess oil.

Cook’s note: Keep warm in a low oven while cooking remaining batches.

  9. 9

Serve hot, optionally with a dollop of sour cream and a sprinkle of fresh dill.
