- 0.25 cupfresh parsley, chopped

The method

Drain the pre-soaked giant white beans and rinse them thoroughly under cold water.

Place the beans in a large pot, cover with fresh water by about 2 inches, and bring to a boil.

Reduce heat and simmer the beans for 45-60 minutes, or until they are tender but still hold their shape; drain and set aside.

In a large oven-safe pot or Dutch oven, heat olive oil over medium heat.

Add the yellow onion and sauté for 5-7 minutes until softened and translucent.
