  • 30 mllemon juice
  • 2 clovegarlic, minced
  • 2 tspdried oregano
  • 0.75 tspsalt
  • 0.25 tspblack pepper, freshly ground

Equipment

skewers · grill · large bowl · tongs

The method

Step by step

  1. 1

In a medium bowl, combine the olive oil, lemon juice, garlic, dried oregano, salt, and black pepper for the marinade.

    About 2 min

  2. 2

Add the cubed chicken breast to the marinade, tossing to ensure all pieces are well coated.

    About 1 min

  3. 3

Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours, to allow the flavors to meld.

Cook’s note: For best flavor, marinate for at least 1 hour.

  4. 4

If using wooden skewers, soak them in water for at least 20 minutes to prevent burning.

  5. 5

Preheat your grill to medium-high heat.

    About 10 min

  6. 6

Thread the marinated chicken pieces onto the skewers, alternating with cherry tomatoes, red onion, and bell pepper if using.

    About 10 min

Cook’s note: Don't pack the chicken too tightly; leave a little space for even cooking.

  7. 7

Grill the skewers for 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice char marks.

    About 15 min

Cook’s note: Chicken is cooked when its internal temperature reaches 165°F (74°C).

  8. 8

Remove the skewers from the grill and let them rest for 5 minutes before serving.

    About 5 min

Cook’s note: Resting allows the juices to redistribute, keeping the chicken moist.
