The method

Step by step

    Prepare the beef sirloin by slicing it very thinly against the grain. Set aside.

    In a small bowl, whisk together the minced garlic, grated ginger, soy sauce, rice vinegar, sesame oil, and chili oil (if using) for the sauce. Set aside.

    Bring a large pot of water to a boil. Add the rice noodles and cook according to package instructions until tender but still firm. Drain and rinse with cold water to prevent sticking, then set aside.

    In a separate large pot, combine the beef broth, star anise, cinnamon stick, and bay leaf. Bring to a simmer over medium heat and let it gently simmer for 15 minutes to infuse the flavors.

    While the broth simmers, heat the vegetable oil in a large skillet or wok over medium-high heat. Add the sliced beef and stir-fry quickly until just browned, about 2-3 minutes. Do not overcrowd the pan; cook in batches if necessary.
