Ingredients

Measurements

Ingredients

  • 300 gsalted herring fillet, diced
  • 3 pcslarge potato
  • 3 pcsmedium carrot
  • 2 pcsmedium beet
  • 1 pcsmedium yellow onion, finely chopped
  • 1.5 cupmayonnaise

garnish

  • 1 tbspfresh dill, chopped(optional)

Equipment

grater · pot · knife · cutting board · serving platter

The method

Step by step

  1. 1

Boil the potatoes, carrots, and beets in separate pots until tender. This will take about 20-30 minutes for carrots and potatoes, and 40-60 minutes for beets.

    About 1 hr

Cook’s note: Boiling vegetables separately prevents the beets from coloring the other vegetables.

  2. 2

Once cooked, let the vegetables cool completely. Peel them, then grate each vegetable separately using the coarse side of a grater.

    About 15 min

Cook’s note: Cooling vegetables before grating makes them easier to handle and prevents the salad from becoming mushy.

  3. 3

Arrange the diced herring evenly on the bottom of a serving platter or a deep dish.

    About 2 min

  4. 4

Spread the finely chopped yellow onion over the herring layer.

    About 1 min

  5. 5

Gently spread half of the grated potatoes over the onion layer. Lightly season with salt and pepper if desired.

    About 2 min

  6. 6

Evenly spread a thin layer of mayonnaise over the potato layer.

    About 1 min

  7. 7

Add all of the grated carrots as the next layer, followed by another thin layer of mayonnaise.

    About 2 min

  8. 8

Spread the remaining grated potatoes, then another thin layer of mayonnaise.

    About 2 min

  9. 9

Top with the grated beets, pressing gently to form an even layer. Cover the entire beet layer generously with the remaining mayonnaise, ensuring all sides are covered.

    About 3 min

Cook’s note: The top layer of mayonnaise acts as the 'fur coat' and should be smooth and even.

  10. 10

Cover the platter with plastic wrap and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld.

  11. 11

Before serving, garnish with fresh dill if desired.

    About 1 min

Keep it good

Storage

Store leftover Herring Under a Fur Coat in an airtight container in the refrigerator.
