  • 0.25 cupcoconut oil, melted
  • 1 tspvanilla extract
  • 0.5 cupdried cranberry(optional)

Equipment

large bowl · baking sheet · parchment paper · spoon · oven · whisk · small bowl

The method

Step by step

  1. 1

Preheat your oven to 150°C (300°F).

    About 5 min

  2. 2

Line a large baking sheet with parchment paper.

  3. 3

In a large bowl, combine the rolled oats, chopped almonds, chopped pecans, sunflower seeds, ground flaxseeds, cinnamon, and salt.

    About 2 min

  4. 4

In a separate small bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract until well combined.

    About 1 min

Cook’s note: Ensure coconut oil is fully melted for even mixing.

  5. 5

Pour the wet ingredients over the dry ingredients and stir thoroughly until all the oats, nuts, and seeds are evenly coated.

    About 2 min

  6. 6

Spread the granola mixture in an even layer on the prepared baking sheet.

    About 1 min

  7. 7

Bake for 30 minutes, stirring gently halfway through to ensure even browning.

    About 30 min

Cook’s note: Keep an eye on it to prevent burning, as oven temperatures can vary.

  8. 8

Remove the granola from the oven and let it cool completely on the baking sheet for at least 15 minutes without stirring.

    About 15 min

Cook’s note: Cooling undisturbed helps create those desirable granola clusters.

  9. 9

Once cooled, stir in the dried cranberries, if using.

Cook’s note: Adding dried fruit after baking keeps it soft and chewy.
