Equipment

The method

Step by step

  1. 1

In a large bowl, combine the gochujang, gochugaru, soy sauce, minced garlic, grated ginger, sugar, sesame oil, and black pepper to create the marinade.

    About 3 min

  2. 2

Add the thinly sliced pork shoulder to the marinade and mix well, ensuring all the pork is evenly coated.

    About 2 min

Cook’s note: Use gloves if you want to avoid staining your hands with the gochujang.

  3. 3

Cover the bowl and refrigerate for at least 30 minutes, or up to several hours for deeper flavor.

    About 30 min

  4. 4

Heat cooking oil in a large skillet or wok over medium-high heat.

    About 1 min

Cook’s note: Ensure the pan is hot before adding the pork to get a good sear.

  5. 5

Add the marinated pork to the hot pan in a single layer, avoiding overcrowding. Cook in batches if necessary.

    About 3 min

Cook’s note: Don't stir too much initially; let the pork sear and develop some char.

  6. 6

Stir-fry the pork until it is mostly cooked through and browned, about 5-7 minutes.

    About 7 min

  7. 7

Add the sliced yellow onion, julienned carrot, and sliced green bell pepper to the pan with the pork.

    About 1 min

  8. 8

Continue to stir-fry for another 5-7 minutes, until the vegetables are tender-crisp and the pork is fully cooked.

    About 7 min

Cook’s note: Do not overcook the vegetables; they should retain some crunch.

  9. 9

Remove from heat and transfer the Jeyuk Bokkeum to a serving platter.

    About 1 min

  10. 10

Garnish with chopped scallions and toasted sesame seeds before serving.
