The method

Step by step

  1. 1

If starting with raw chicken, cook the chicken breast until fully done, then shred it into bite-sized pieces.

    About 10 min

Cook’s note: You can use pre-cooked rotisserie chicken for a quicker prep time.

  2. 2

In a small bowl, whisk together the mayonnaise, dijon mustard, lemon juice, minced garlic, worcestershire sauce, salt, and black pepper to create the Caesar dressing.

    About 2 min

Cook’s note: Taste and adjust seasonings as needed, adding more lemon or garlic for extra zing.

  3. 3

In a medium bowl, combine the shredded chicken, chopped romaine lettuce, and shredded parmesan cheese.

    About 1 min

  4. 4

Pour the prepared Caesar dressing over the chicken and lettuce mixture and toss gently until everything is evenly coated.

    About 1 min

  5. 5

Lay out each keto tortilla on a clean surface.

  6. 6

Divide the Caesar chicken mixture evenly between the two tortillas, placing it slightly off-center.

    About 1 min

Cook’s note: Don't overfill to make rolling easier.

  7. 7
