- 2 tbspvegetable oil
- 0.5 tspcaraway seed

- 2 cupwater
- 1 pinchblack pepper, freshly ground
- 1 pinchsalt

- 2 tbspfresh parsley, chopped(optional)
Equipment

The method
Step by step
- 1
Place the white kielbasa in a large pot and cover with water. Bring to a gentle simmer over medium heat.
About 10 min
Cook’s note: Do not boil the kielbasa aggressively, as this can cause the casings to burst.
- 2
Reduce the heat to low and simmer the kielbasa for 15-20 minutes, or until cooked through. Remove from the pot and set aside.
About 20 min
- 3
In a large skillet or Dutch oven, heat the vegetable oil over medium heat. Add the yellow onion and sauté until softened, about 5 minutes.
About 5 min
- 4
Add the drained sauerkraut, sliced apple, caraway seed, bay leaf, and water to the skillet. Stir to combine.
- 5
Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 15 minutes, stirring occasionally, until the apples are tender.
About 15 min
- 6
While the sauerkraut is cooking, lightly brown the cooked kielbasa in a separate pan or under a broiler for a few minutes on each side, if desired, for extra flavor and color.
About 5 min
Cook’s note: Browning adds a nice texture and deeper flavor to the sausage.
- 7
Season the sauerkraut and apple mixture with salt and black pepper to taste. Remove the bay leaves before serving.
- 8
Serve the browned white kielbasa alongside the warm sauerkraut and apples. Garnish with fresh parsley, if using.
