Equipment

The method

Step by step

  1. 1

Place the lamb stew meat in a large pot or Dutch oven.

    About 1 min

  2. 2

Add the water to the pot, ensuring the lamb is fully submerged.

    About 1 min

  3. 3

Bring the water to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 45 minutes, skimming off any foam that rises to the surface.

    About 45 min

Cook’s note: Skimming the foam helps keep the broth clear.

  4. 4

Add the chopped yellow onion, sliced carrots, cubed potatoes, cubed rutabaga, sliced leek, and sliced celery to the pot.

    About 5 min

  5. 5

Stir in the fresh thyme, dried bay leaf, salt, and black pepper.

    About 1 min

  6. 6

Bring the soup back to a gentle simmer, cover, and cook for another 40 minutes, or until the vegetables are tender and the lamb is very soft.

    About 40 min

Cook’s note: Test the lamb for tenderness with a fork.

  7. 7

Remove the bay leaf before serving.

    About 1 min

  8. 8

Ladle the hot soup into bowls and garnish with fresh parsley.

    About 1 min

Cook’s note: Serve with crusty bread for a complete meal.
