syrup

  • 240 mlwater
  • 2 tbspgranulated sugar
  • 2 tbsplime juice, freshly squeezed

Ingredients

  • 400 gassorted melon, e.g. cantaloupe or honeydew

garnish

  • 1 tbsppomegranate seed(optional)
  • 4 pcsfresh mint, sprigs(optional)
  • 0.25 pcslime, thinly sliced(optional)

Equipment

melon baller · mixing bowl · small saucepan · cutting board · knife · whisk

The method

Step by step

  1. 1

In a small saucepan, combine the water and granulated sugar.

    About 1 min

  2. 2

Heat the mixture over medium heat, stirring occasionally, until the sugar dissolves and it comes to a gentle simmer.

    About 4 min

Cook’s note: Ensure the sugar is fully dissolved before removing from the heat for a smooth, clear syrup.

  3. 3

Remove the saucepan from the heat and set it aside to cool completely to room temperature.

    About 20 min

Cook’s note: To speed up cooling, you can place the saucepan in a larger bowl of ice water.

  4. 4

While the syrup cools, use a melon baller to scoop the assorted melon into balls.

    About 10 min

Cook’s note: Rotate the melon baller in a full circle to create perfectly round melon balls.

  5. 5

Once the syrup is cool, stir in the freshly squeezed lime juice.

  6. 6

Place the melon balls in a medium bowl and pour the cooled lime syrup over them, tossing gently to coat.

  7. 7

Divide the melon balls and syrup among serving glasses, and top with pomegranate seeds, fresh mint, or lime slices if desired.
