  • 1 tbspwhole pickling spice

Brine

  • 100 gpickling salt
  • 1,000 mlwater, for the brine

Alum Soak

  • 1 tspfood-grade alum
  • 1,000 mlwater, for the alum soak

Vinegar Soak

  • 750 mlwhite vinegar, 5% acidity

Syrup

  • 250 mlwhite vinegar, 5% acidity
  • 500 ggranulated sugar
  • 0.5 tspground turmeric

The method

Step by step

    In a large, non-reactive bowl or crock, dissolve the pickling salt in the water for the brine.

    Add the sliced cucumbers to the brine, ensuring they are fully submerged. Use a small plate to weigh them down if necessary.

    Cover the container and let it stand at room temperature for 3 days.

    After 3 days, drain the cucumbers, discard the brine, and rinse the slices thoroughly under cold running water.

    Return the cucumbers to the clean container. Dissolve the alum in fresh water and pour it over the slices to cover them completely.

    Let the cucumbers soak in the alum solution for 24 hours.

    After 24 hours, drain and discard the alum solution. Rinse the cucumber slices very well.

    Return the cucumbers to the clean container and pour the vinegar for the soak over them.

    Cover and let stand at room temperature for 7 days, giving the container a gentle stir once per day.

    In a small saucepan, combine the vinegar for the syrup, sugar, and ground turmeric.

    Heat the mixture over low heat, stirring constantly, just until the sugar has completely dissolved. Do not allow it to boil.
