The method

Step by step

    Rinse the sushi rice thoroughly under cold running water until the water runs clear.

    Combine the rinsed rice and water in a medium saucepan. Bring to a boil over high heat, then immediately reduce heat to low, cover tightly, and simmer for 15 minutes.

    Using a rice paddle or wooden spoon, gently fold and cut the rice with a fanning motion to cool it down and evenly distribute the seasoning. Avoid mashing the rice.
