  • 240 mlmilk, full-fat recommended
  • 2 tbspblack tea leaves
  • 2 pcsginger, fresh, grated
  • 4 pcsgreen cardamom pod, lightly crushed
  • 2 pcsclove
  • 0.5 pcscinnamon stick, small
  • 2 tspsugar(optional)

Equipment

saucepan · fine-mesh sieve · serving cups

The method

Step by step

  1. 1

Combine the water, grated ginger, green cardamom pods, cloves, and cinnamon stick in a small saucepan.

  2. 2

Bring the mixture to a boil over medium-high heat.

    About 2 min

  3. 3

Reduce the heat to low and simmer the spices for 3-5 minutes, allowing their flavors to infuse the water.

    About 4 min

Cook’s note: Longer simmering will result in a stronger spice flavor.

  4. 4

Add the black tea leaves and milk to the saucepan.

  5. 5

Increase the heat to medium and bring the chai to a gentle boil, stirring occasionally.

    About 2 min

Cook’s note: Watch carefully to prevent the milk from boiling over.

  6. 6

Once it boils, immediately reduce the heat to low and simmer for another 2-3 minutes, or until the chai reaches your desired strength and color.

    About 2 min

Cook’s note: The longer you simmer, the richer the color and flavor will be.

  7. 7

Remove the saucepan from the heat and stir in the sugar, if using, until dissolved.

Cook’s note: Adjust sugar to your personal preference.

  8. 8

Strain the chai through a fine-mesh sieve into serving cups, discarding the solids.

  9. 9

Serve hot and enjoy your homemade masala chai.
