Moin Moin is a savory steamed bean pudding popular in Nigeria. Made from a blend of peeled black-eyed peas, peppers, and onions, it's a protein-rich dish often served as a side or light meal.   • 1 pcsred bell pepper, deseeded
  • 1 pcsscotch bonnet pepper

  • 0.5 tspbouillon powder

The method

Step by step

    Blend the soaked and peeled black-eyed peas with the red bell pepper, scotch bonnet pepper, and yellow onion until very smooth, adding a little water if needed to help the blender.

    Pour the bean mixture into a large bowl.

    Gradually whisk in the vegetable oil and fish stock into the bean mixture, ensuring it is well combined.

    Prepare your steaming vessels; if using banana leaves, rinse and gently heat them over a flame to make them pliable. Alternatively, lightly grease individual ramekins or heat-proof bowls.

    Fill each prepared vessel about two-thirds full with the bean mixture.
