  • 60 mlcold water
  • 360 mlorange juice
  • 30 mlmaple syrup(optional)

  • 50 gred cabbage, finely shredded
  • 50 ggreen cabbage, finely shredded
  • 50 gcelery, finely chopped
  • 5 gchives, minced

The method

Step by step

    Lightly grease a 1-quart (1-liter) mold with the neutral oil.

    In a small saucepan, pour the cold water and sprinkle the gelatin powder over the top. Let it stand for 2 minutes to bloom.

    Place the saucepan over low heat and stir gently until the gelatin has completely dissolved, about 2-3 minutes. Do not let the mixture boil.

    Remove the saucepan from the heat and stir in the orange juice, optional maple syrup, and salt until fully combined.

    Pour the gelatin mixture into a separate bowl and refrigerate until it has thickened to the consistency of raw egg whites, about 30-40 minutes.

    Remove the thickened gelatin from the refrigerator and gently fold in the shredded carrot, red cabbage, green cabbage, celery, and chives.
