The method

Step by step

    Whisk the eggs and milk (if using) in a medium bowl until well combined and slightly frothy, then season with salt and black pepper.

    Heat half of the butter in a 20-22 cm non-stick frying pan over medium heat until melted and sizzling.

    Add the sliced button mushrooms to the pan and sauté for 3-4 minutes, until they are tender and have released their liquid.

    Remove the cooked mushrooms from the pan and set aside.

    Add the remaining butter to the same pan and swirl to coat the bottom evenly.

    Pour the egg mixture into the hot pan.

    As the edges begin to set, gently push the cooked egg from the edges towards the center with a spatula, tilting the pan to allow the uncooked egg to flow underneath.
