The method

Step by step

    Boil the pork belly in a pot of water until tender, about 30-40 minutes. Remove, let cool, and slice thinly. Reserve the cooking water.

    Heat vegetable oil in a large pot over medium-high heat. Add the prawn heads and shells and stir-fry until fragrant and red, about 5 minutes.

    Add the sliced shallots and minced garlic to the pot and continue to stir-fry until aromatic, about 2-3 minutes.

    Stir in the chili powder and cook for 1 minute until fragrant. Pour in the water and the reserved pork belly cooking water. Bring to a boil, then reduce heat and simmer for at least 30 minutes to develop the broth's flavor.

    Strain the broth through a fine-mesh sieve, discarding the solids. Return the clear broth to the pot. Season with sugar and salt to taste.

    Blanch the yellow noodles and rice vermicelli in boiling water for 1-2 minutes until just cooked. Drain well.

    Quickly blanch the peeled and deveined prawns in the hot broth until just pink and cooked through, about 1-2 minutes. Remove the prawns and set aside.
