  • 1,000 gbeef chuck, cut into 5cm cubes
  • 750 mlred wine, dry, like Chianti
  • 8 clovegarlic, peeled, left whole
  • 2 tbspblack peppercorns, freshly crushed
  • 2 tbsptomato paste
  • 5 grosemary
  • 2 pcsbay leaf
  • 2 tbspolive oil
  • 1 tspsalt

Equipment

dutch oven · knife · cutting board

The method

Step by step

  1. 1

Pat the beef cubes dry with paper towels and season generously with salt and the crushed black peppercorns.

    About 5 min

Cook’s note: Drying the beef helps achieve a better sear.

  2. 2

Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat.

    About 2 min

  3. 3

Sear the beef in batches until browned on all sides, then remove it from the pot and set aside.

    About 8 min

Cook’s note: Do not overcrowd the pot; sear in batches to ensure proper browning.

  4. 4

Add the whole garlic cloves to the pot and cook for 1 minute until fragrant.

    About 1 min

  5. 5

Stir in the tomato paste and cook for another minute, stirring constantly.

    About 1 min

Cook’s note: Cooking the tomato paste deepens its flavor.

  6. 6

Deglaze the pot with the red wine, scraping up any browned bits from the bottom.

    About 2 min

  7. 7

Return the seared beef to the pot, then add the rosemary sprig and bay leaves.

    About 1 min

  8. 8

Bring the liquid to a gentle simmer, then reduce the heat to low, cover the pot, and cook for at least 3 hours, or until the beef is very tender.

    About 3 hr

Cook’s note: Check occasionally and stir to prevent sticking. If the liquid reduces too much, add a splash of water or more wine.

  9. 9

Remove the rosemary sprig and bay leaves before serving.

  10. 10

Taste and adjust seasoning with salt and additional black pepper if needed.
