Equipment

large pot · large bowl · cutting board · knife

The method

Step by step

  1. 1

In a large bowl, combine the pork shoulder, soy sauce, and lemon juice.

Cook’s note: Marinating the pork helps tenderize it and infuse flavor.

  2. 2

Marinate the pork for at least 15 minutes, or up to 30 minutes at room temperature.

    About 15 min

  3. 3

Heat the cooking oil in a large pot or Dutch oven over medium heat.

    About 2 min

  4. 4

Sauté the minced garlic until fragrant, about 30 seconds.

    About 1 min

Cook’s note: Be careful not to burn the garlic.

  5. 5

Add the chopped yellow onion and cook until softened, about 3-5 minutes.

    About 4 min

  6. 6

Add the marinated pork to the pot and cook, stirring occasionally, until lightly browned on all sides.

    About 8 min

Cook’s note: Do not overcrowd the pot; cook in batches if necessary.

  7. 7

Pour in the tomato sauce and water.

  8. 8

Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 30 minutes, or until the pork is tender.

    About 30 min

Cook’s note: Stir occasionally to prevent sticking.

  9. 9

Add the cubed potatoes and carrots to the pot.

  10. 10

Continue to simmer for another 10-15 minutes, or until the vegetables are fork-tender.

    About 15 min

  11. 11

Stir in the pork liver, red bell pepper, green bell pepper, green peas (if using), sugar, salt, and black pepper.

Cook’s note: Add the liver last as it cooks quickly.

  12. 12

Cook for another 5-7 minutes, or until the liver is cooked through and the bell peppers are slightly tender-crisp.

    About 7 min

Cook’s note: Adjust seasoning to taste before serving.

  13. 13

Remove from heat and serve hot with steamed rice.
