  • 700 gpork shoulder, cut into 2.5 cm cubes
  • 2 tbspvegetable oil
  • 1 pcsyellow onion, finely chopped

  • 2 tbspginger, chopped
  • 4 clovegarlic, chopped
  • 0.5 cupwhite vinegar

The method

Step by step

    In a dry pan over medium heat, lightly toast the dried red chilies, cumin seeds, black peppercorns, cloves, cardamom pods, and cinnamon stick for 2-3 minutes until fragrant.

    Transfer the toasted spices to a spice grinder or mortar and pestle and grind them into a fine powder.

    Add the ground spices to a blender along with the turmeric powder, chopped ginger, chopped garlic, and white vinegar. Blend until a smooth paste forms, adding a tablespoon of water if needed to help it blend.

    Place the pork cubes in a large bowl, pour the prepared vindaloo paste over them, and mix well to ensure all pork is coated.

    Cover the bowl and refrigerate to marinate for at least 4 hours, or preferably overnight.

    When ready to cook, heat the vegetable oil in a large heavy-bottomed pot or Dutch oven over medium heat.

    Add the marinated pork and any remaining marinade to the pot. Sear the pork on all sides for about 5-7 minutes until lightly browned.
