The method

Step by step

    Melt the base butter in a large, heavy-bottomed pot or Dutch oven over medium heat.

    Add the yellow onion and cook until softened and translucent, about 5-7 minutes. Do not let it brown.

    Add the arborio rice to the pot and stir constantly for 2 minutes until the edges of the grains become translucent.

    Continue adding broth, one ladleful at a time, and stirring, until the rice is creamy and al dente, about 25-30 minutes total. The risotto should still be a bit loose.
