The method
Step by step
- 1
In a large bowl, combine the plain yogurt, lemon juice, minced garlic, olive oil, tomato paste, paprika, dried oregano, salt, black pepper, and optional cayenne pepper.
About 2 min
Cook’s note: Ensure all spices are well mixed into the yogurt for an even marinade.
- 2
Add the cubed chicken breast to the marinade, tossing to ensure all pieces are thoroughly coated.
About 1 min
- 3
Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld and tenderize the chicken.
About 2 hr
Cook’s note: Marinating longer will result in more flavorful and tender chicken.
- 4
If using wooden skewers, soak them in water for at least 30 minutes before threading to prevent burning.
- 5
Preheat your grill to medium-high heat (around 200°C / 400°F) or preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
About 10 min
- 6
Thread the marinated chicken pieces onto the skewers, leaving a small space between each piece to ensure even cooking.
About 5 min
Cook’s note: Do not overcrowd the skewers.
- 7
Grill the skewers for 10-15 minutes, turning occasionally, until the chicken is cooked through and lightly charred on all sides.
About 15 min
Cook’s note: If baking, arrange skewers on the prepared baking sheet and bake for 15-20 minutes, flipping halfway, until cooked through.
- 8
Remove the shish tawook from the grill or oven and let rest for a few minutes before serving.
