  • 150 gboneless, skinless chicken thigh, cut into 1 cm cubes
  • 80 gshiitake mushroom, sliced
  • 0.5 pcscarrot, julienned
  • 50 gburdock root, julienned, soaked in water
  • 360 mldashi
  • 2 tbspsoy sauce
  • 1 tbspmirin
  • 1 tbspsake
  • 0.5 tspsalt

The method

Step by step

    Wash the short-grain rice thoroughly under cold running water until the water runs clear, then drain well.

    In a medium pot or rice cooker, combine the dashi, soy sauce, mirin, sake, and salt.

    Add the rinsed rice to the pot, spreading it evenly.

    Arrange the chicken, shiitake mushrooms, carrot, and burdock root on top of the rice in a single layer.

    If using a pot, bring the mixture to a boil over medium-high heat, then immediately reduce the heat to low, cover tightly, and simmer for 15 minutes.

    If using a rice cooker, simply select the 'regular' or 'white rice' setting and start the cooking cycle.

    Once cooking is complete (either by simmering or rice cooker cycle), remove the pot from the heat (if applicable) and let it rest, covered, for 10 minutes.
