- 0.5 tspsalt

Equipment

The method
Step by step
- 1
Wash the short-grain rice thoroughly under cold running water until the water runs clear, then drain well.
About 3 min
- 2
In a medium pot or rice cooker, combine the dashi, soy sauce, mirin, sake, and salt.
About 1 min
- 3
Add the rinsed rice to the pot, spreading it evenly.
- 4
Arrange the chicken, shiitake mushrooms, carrot, and burdock root on top of the rice in a single layer.
About 2 min
Cook’s note: Do not stir the ingredients at this stage.
- 5
If using a pot, bring the mixture to a boil over medium-high heat, then immediately reduce the heat to low, cover tightly, and simmer for 15 minutes.
About 15 min
Cook’s note: Ensure the lid is snug to prevent steam from escaping.
- 6
If using a rice cooker, simply select the 'regular' or 'white rice' setting and start the cooking cycle.
- 7
Once cooking is complete (either by simmering or rice cooker cycle), remove the pot from the heat (if applicable) and let it rest, covered, for 10 minutes.
About 10 min
Cook’s note: This resting period allows the rice to fully absorb the steam and become fluffy.
- 8
Gently fluff the rice and mix all the ingredients together using a rice paddle.
About 1 min
- 9
Serve hot, garnished with sliced green onion.
