Waakye

The method

Step by step

    Rinse the dried black-eyed peas under cool water.

    Place the rinsed peas in a large bowl, cover with plenty of water, and let them soak overnight or for at least 8 hours.

    After soaking, drain the water and give the peas another quick rinse.

    In a large pot, combine the soaked peas, dried sorghum leaves, and the optional kaun.

    Pour in the water and bring the mixture to a boil over high heat.

    Reduce the heat to a simmer, cover the pot, and cook until the peas are tender, which should take about 45-60 minutes.

    While the peas are simmering, rinse the rice in a separate bowl until the water runs clear.

    Once the peas are tender, use tongs to carefully remove and discard the sorghum leaves from the pot.
