Ingredients

crust

  • 432 gyellow cake mix
  • 113 gunsalted butter, melted
  • 1 pcslarge egg

filling

  • 226 gcream cheese (full-fat block), softened to room temperature
  • 2 pcslarge egg
  • 454 gpowdered sugar, sifted

Equipment

spatula · wire rack · mixing bowl · electric mixer · knife · 9x13 inch baking pan

The method

Step by step

  1. 1

Preheat your oven to 190°C (375°F) and lightly grease a 23x33cm (9x13 inch) baking pan.

    About 5 min

Cook’s note: Greasing the pan well ensures the bars will come out cleanly after cooling.

  2. 2

In a medium bowl, combine the yellow cake mix, melted butter, and one egg for the crust.

    About 2 min

  3. 3

Mix until a thick, stiff dough forms.

    About 1 min

Cook’s note: The dough will be dense, similar to a cookie dough.

  4. 4

Press the crust mixture evenly into the bottom of your prepared baking pan.

    About 3 min

Cook’s note: Use your fingertips or the back of a spoon to create an even layer.

  5. 5

In a separate large bowl, use an electric mixer to beat the softened cream cheese until smooth and creamy.

    About 2 min

Cook’s note: Ensuring the cream cheese is fully softened and lump-free is key to a smooth filling.

  6. 6

Add the two eggs for the filling, one at a time, beating well after each addition.

    About 1 min

  7. 7

Gradually add the sifted powdered sugar and beat on low speed until just combined and smooth.

    About 1 min

Cook’s note: Avoid overmixing, which can incorporate too much air into the filling.

  8. 8

Pour the cream cheese filling over the crust and spread it into an even layer.

    About 1 min

  9. 9

Bake for 40-45 minutes, until the edges are golden brown and the center is set but still has a slight jiggle.

    About 45 min

Cook’s note: The center will firm up completely as it cools.

  10. 10

Place the pan on a wire rack and let it cool completely to room temperature, for at least one hour.

    About 1 hr

Cook’s note: Do not attempt to cut the bars while warm, as the filling needs time to set.

  11. 11

Once fully cooled, cut into bars and serve.
