  • 0.5 tspblack pepper, freshly ground

for topping

  • 1 pcsyellow onion, thinly sliced
  • 2 tbspbutter

for serving

  • 1 cupapplesauce

Equipment

frying pan · grater · large pot · wooden spoon

The method

Step by step

  1. 1

Bring a large pot of salted water to a boil.

    About 5 min

  2. 2

Add the pasta and diced potato to the boiling water and cook according to pasta package instructions, usually about 8-10 minutes, until al dente.

    About 10 min

Cook’s note: The potatoes should be tender but not mushy.

  3. 3

While the pasta and potatoes cook, heat the butter in a separate frying pan over medium heat.

  4. 4

Add the sliced yellow onion to the pan and fry, stirring occasionally, until deeply golden brown and crispy.

    About 10 min

Cook’s note: Cook them slowly to achieve maximum crispiness without burning.

  5. 5

Once cooked, drain the pasta and potatoes well, reserving about a cup of the cooking water.

    About 1 min

  6. 6

Return the drained pasta and potatoes to the empty pot.

  7. 7

Pour in the heavy cream and half of the grated swiss cheese.

  8. 8

Stir everything together over low heat until the cheese is melted and the sauce is creamy, adding a splash of reserved cooking water if it's too thick.

    About 3 min

  9. 9

Season with salt and black pepper to taste.

  10. 10

Transfer the Älplermagronen to serving bowls.

  11. 11

Top each serving with the remaining grated swiss cheese and a generous amount of the crispy fried yellow onion.

  12. 12

Serve immediately with a side of applesauce.

Cook’s note: The applesauce provides a lovely sweet and tart contrast to the rich, savory dish.
