  • 1 pcslime, juiced

The method

Step by step

    Heat olive oil in a large skillet or pot over medium heat.

    Add yellow onion and cook until softened, about 5-7 minutes.

    Stir in garlic, chili powder, cumin, and smoked paprika. Cook for 1 minute until fragrant.

    Add black beans and vegetable broth to the skillet. Bring to a simmer.

    Reduce heat to low and simmer for 5-7 minutes, mashing some of the beans with the back of a spoon to create a slightly creamy texture.

    Cook’s note: Mashing some beans helps them stick together better in the taco.

    Remove from heat and stir in lime juice and salt. Taste and adjust seasoning as needed.

    Warm the corn tortillas according to package directions, either in a dry skillet, microwave, or oven.
