The method

Step by step

  1. 1

Preheat your oven to 200°C (400°F).

    About 10 min

  2. 2

In a large roasting pan or baking dish, combine the potato, zucchini, eggplant, yellow onion, garlic, and bell pepper.

    About 5 min

Cook’s note: Ensure the pan is large enough so the vegetables are not too crowded, allowing them to roast rather than steam.

  3. 3

Pour the canned crushed tomato and olive oil over the vegetables.

    About 1 min

  4. 4

Add the dried oregano, salt, and black pepper to the pan.

    About 1 min

  5. 5

Toss all the ingredients together thoroughly until the vegetables are evenly coated.

    About 3 min

Cook’s note: Use your hands for the best mixing.

  6. 6

Spread the vegetables in a single layer in the roasting pan.

    About 1 min

  7. 7

Roast for 30 minutes, then remove the pan from the oven and stir the vegetables.

    About 30 min

  8. 8

Return the pan to the oven and continue roasting for another 30-40 minutes, or until the vegetables are very tender and slightly caramelized.

    About 35 min

Cook’s note: The exact cooking time will depend on your oven and how small you cut the vegetables.
