Equipment

The method

Step by step

  1. 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

    About 1 min

  2. 2

Add the chopped white onion and cook, stirring occasionally, until softened and translucent, about 5 minutes.

    About 5 min

Cook’s note: Don't let the onion brown, as this will color the clear broth.

  3. 3

Stir in the minced garlic and optional serrano chili, and cook for 30-60 seconds until fragrant.

    About 1 min

  4. 4

Pour in the chicken broth, increase the heat, and bring the liquid to a gentle simmer.

    About 3 min

  5. 5

Add the shredded chicken and drained chickpeas to the pot.

    About 1 min

    Cook’s note: Using a pre-cooked rotisserie chicken is a great time-saver.

  6. 6

Season with salt and black pepper, then reduce the heat to low and let the soup simmer for at least 10 minutes to allow the flavors to meld.

    About 10 min

Cook’s note: Taste the broth before serving and adjust seasoning if needed.

  7. 7

Ladle the hot soup into four individual bowls.

    About 1 min

  8. 8

Top each serving with diced avocado, chopped cilantro, and crushed corn tortilla chips.

    About 1 min

Cook’s note: Add the garnishes just before serving to keep them fresh and crisp.

  9. 9

Serve immediately with lime wedges on the side for squeezing over the soup.
