Measurements

  • 100 gpecan
  • 100 gwalnut
  • 450 gcooked chicken breast, roughly chopped
  • 240 gmayonnaise
  • 2 tbspcrystallized ginger, minced
  • 1 tbspsoy sauce
  • 2 tspworcestershire sauce
  • 1 tspwhite wine vinegar
  • 50 ggreen onion, thinly sliced

Equipment

bowl · food processor · spatula · cutting board · knife

The method

Step by step

  1. 1

Place the pecans and walnuts into the bowl of a food processor.

    About 1 min

  2. 2

Pulse the nuts until they are finely ground into a coarse, sandy texture.

    About 1 min

Cook’s note: Be careful not to over-process, or you will end up with nut butter.

  3. 3

Add the chopped cooked chicken to the food processor with the ground nuts.

    About 1 min

  4. 4

Pulse several times until the chicken is broken down and thoroughly mixed with the nuts.

    About 2 min

  5. 5

Add the mayonnaise, minced crystallized ginger, soy sauce, Worcestershire sauce, and white wine vinegar to the processor.

    About 1 min

  6. 6

Process until the mixture is smooth and creamy, scraping down the sides of the bowl as needed to ensure everything is well combined.

    About 2 min

  7. 7

Transfer the pâté to a medium bowl and stir in the sliced green onions.

    About 2 min

Cook’s note: Stirring the onions in by hand preserves their texture and prevents them from turning the pâté green.

  8. 8

Cover the bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

    About 30 min
