In a large Dutch oven or heavy-bottomed pot, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, reserving the rendered fat in the pot.

Season the chicken thighs generously with salt and black pepper. Add the chicken to the pot, skin-side down, and sear until deeply golden brown, about 5-7 minutes per side. Remove the chicken and set aside.
