The method

Step by step

    Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.

    Arrange the roma tomatoes, yellow onion, and garlic on the prepared baking sheet.

    Drizzle the olive oil over the vegetables and toss to coat evenly. Season with salt and black pepper.

    Roast the vegetables for 25-30 minutes, or until the tomatoes are soft and slightly caramelized and the onion is tender.
