Ingredients
- 225 gdominican salami, sliced into 1 cm thick rounds
- 2 tbspvegetable oil
- 2 tbspwater(optional)
garnish
- 1 pcslime, cut into wedges
Equipment
plate · large skillet · paper towels · tongs · cutting board · knife
The method
Step by step
- 1
If not already sliced, cut the Dominican salami into rounds approximately 1 cm (1/2 inch) thick.
About 3 min
- 2
Heat the vegetable oil in a large skillet over medium-high heat until it shimmers slightly.
About 2 min
Cook’s note: A cast-iron skillet works great for achieving a good crust.
- 3
Carefully arrange the salami slices in the hot pan in a single layer, ensuring they don't overlap.
About 1 min
- 4
Fry for 3-4 minutes on the first side until deeply browned and the edges are crispy.
About 4 min
- 5
Flip the salami slices. For a softer center, add the optional water to the pan and cover immediately to steam for 1 minute.
About 1 min
Cook’s note: Be careful as the water will cause the oil to spatter.
- 6
Uncover the pan and continue frying for another 2-3 minutes until the second side is also browned and crisp.
About 3 min
- 7
Transfer the fried salami to a paper towel-lined plate to drain off excess oil.
About 1 min
- 8
Serve immediately with fresh lime wedges for squeezing over the top.
Cook’s note: Pairs perfectly with mangú (mashed plantains) and pickled red onions.
Keep it good
Store leftovers in an airtight container in the refrigerator.
Reheat briefly in a hot, dry skillet or an air fryer for a few minutes until crisp.
