The method

    Heat the olive oil in a large heavy-bottomed pot or Dutch oven over medium heat.

    Add the chopped yellow onion and cook until softened and translucent, about 5-7 minutes.

    Pour in the water and bring the mixture to a gentle simmer, then reduce the heat to low, cover, and cook for 30 minutes, stirring occasionally.
