Ingredients
- 1 pcsgraham cracker crust, 9-inch (22.9 cm), store-bought
filling
- 450 gcream cheese, softened to room temperature
- 100 ggranulated sugar
- 0.5 tspvanilla extract
- 2 pcslarge egg
garnish
- 300 gmixed fresh fruit, sliced
Equipment
large bowl · wire rack · spatula · electric mixer · knife · oven
The method
Step by step
- 1
Preheat your oven to 175°C (350°F).
- 2
In a large bowl, beat the softened cream cheese with an electric mixer until smooth and free of lumps.
About 2 min
Cook’s note: Ensuring the cream cheese is at room temperature is key to a lump-free filling.
- 3
Add the granulated sugar and vanilla extract to the bowl.
- 4
Beat on medium speed until the sugar is fully incorporated and the mixture is light and fluffy.
About 2 min
- 5
Add the eggs one at a time, mixing on low speed just until each egg is blended in.
About 1 min
Cook’s note: Do not overmix after adding the eggs, as this can cause the cheesecake to crack during baking.
- 6
Pour the cheesecake filling into the prepared graham cracker crust.
About 1 min
- 7
Use a spatula to spread the filling into an even layer.
About 1 min
- 8
Bake for 40 minutes, until the center is almost set but still has a slight wobble.
About 40 min
Cook’s note: The cheesecake will continue to set as it cools.
- 9
Remove from the oven and let the cheesecake cool completely on a wire rack, for about one hour.
About 1 hr
- 10
Cover the cheesecake and transfer to the refrigerator to chill for at least 3 hours, or until firm.
About 3 hr
- 11
Just before serving, arrange the sliced fresh fruit over the top of the chilled cheesecake.
About 3 min
Cook’s note: Berries, sliced peaches, or kiwi all work wonderfully.
