The method

Step by step

  1. 1

Prepare the sauce by whisking together the gluten-free tamari, gluten-free oyster sauce, fish sauce, sugar, and water in a small bowl.

    About 2 min

  2. 2

Heat the light olive oil in a large wok or skillet over medium-high heat.

    About 1 min

  3. 3

Add the minced garlic, sliced shallot, and sliced red chili to the hot oil and stir-fry for 1-2 minutes until fragrant.

    About 2 min

Cook’s note: Be careful not to burn the garlic.

  4. 4

Add the ground chicken to the wok and break it apart with your spatula.

  5. 5

Cook the chicken for 5-7 minutes, stirring occasionally, until it is fully cooked through and lightly browned.

    About 7 min

  6. 6

Pour the prepared sauce over the cooked chicken and stir well to coat.

  9. 9

Serve immediately over cooked jasmine rice, optionally topped with a fried egg.
