  • 1 pcscarrot, grated

  • 1 tbsplemon juice
  • 2 tbspfresh parsley, chopped(optional)

The method

Step by step

    Lay one tortilla flat on a clean surface.

    Cook’s note: If your tortillas are stiff, warm them slightly in a dry pan or microwave for a few seconds to make them more pliable.

    Spread half of the hummus evenly over the entire surface of the tortilla, leaving a small border around the edges.

    Arrange half of the sliced cucumber, grated carrot, sliced bell pepper, spinach, and sliced red onion in a line down the center of the tortilla.

    Cook’s note: Don't overfill the wrap, as it will be harder to roll.

    Drizzle half of the lemon juice over the vegetables.

    Sprinkle with half of the chopped fresh parsley, if using, and season with a pinch of salt and black pepper to taste.

    Fold in the sides of the tortilla over the filling, then tightly roll the tortilla from the bottom upwards to form a secure wrap.
