The method

Step by step

    If using, heat a non-stick skillet over medium heat and add the diced kielbasa.

    Cook the kielbasa, stirring occasionally, until it is browned and slightly crispy, about 5-7 minutes.

    Cook’s note: Render out some of the fat from the kielbasa for extra flavor.

    If using, add the chopped yellow onion to the skillet with the kielbasa and cook until softened, about 3-4 minutes.

    Crack the eggs into a medium bowl and whisk them lightly with a fork until just combined; season with salt and black pepper.

    Cook’s note: Do not over-whisk the eggs; you want some streaks of white and yolk for a more traditional texture.

    Push the kielbasa and onion to one side of the skillet, or remove them and set aside if you prefer.

    Add the butter to the empty side of the skillet and let it melt.
