The method

Step by step

    Melt the chopped chocolate in a double boiler over simmering water, or in a microwave-safe bowl in 30-second intervals, stirring until smooth. Set aside to cool slightly.

    In a large bowl, use an electric mixer to beat the softened butter on medium-high speed until it is light and creamy.
