The method

Step by step

  1. 1

In a bowl, combine the beef sirloin strips with soy sauce, red wine vinegar, cumin, black pepper, and minced garlic.

Cook’s note: Marinate the beef for at least 15 minutes, or up to 30 minutes for deeper flavor.

  2. 2

Heat half of the vegetable oil in a large wok or skillet over high heat until smoking.

    About 2 min

Cook’s note: Ensure the pan is very hot to get a good sear on the beef.

  3. 3

Add half of the marinated beef to the hot pan and sear quickly for 2-3 minutes until browned on all sides, then remove to a plate.

    About 3 min

Cook’s note: Do not overcrowd the pan; cook the beef in batches to ensure it sears instead of steams.

  4. 4

Add the remaining vegetable oil and the rest of the beef to the pan, searing until browned, then remove to the same plate.

    About 3 min

  5. 5

Add the red onion to the same pan and stir-fry for 2-3 minutes until slightly softened but still crisp.

    About 3 min

  6. 6

Stir in the tomato wedges and aji amarillo paste, cooking for another minute.

    About 1 min

  7. 7

Return the seared beef to the pan and toss everything together to combine.

    About 1 min

  8. 8

Add the cooked french fries to the mixture and gently fold them in.

    About 1 min

Cook’s note: Be careful not to break the fries when stirring.

  9. 9

Remove from heat and stir in the chopped cilantro.

  10. 10

    Serve immediately with cooked rice.
