Ingredients

Measurements

roll

  • 200 gmini marshmallow
  • 200 gpitted date, chopped
  • 100 ggraham cracker crumb
  • 30 gpecan, chopped
  • 30 gwalnut, chopped
  • 85 gshredded coconut, sweetened
  • 200 gsweetened condensed milk

coating

  • 50 ggraham cracker crumb

Equipment

sturdy spoon · plastic wrap · large bowl · cutting board · knife

The method

Step by step

  1. 1

In a large bowl, combine the mini marshmallows, chopped dates, pecans, walnuts, shredded coconut, and the main portion of graham cracker crumbs.

    About 3 min

Cook’s note: Using a very large bowl will make mixing easier as the mixture is quite bulky.

  2. 2

Pour the sweetened condensed milk over the dry ingredients.

    About 1 min

  3. 3

Using a sturdy spoon or your hands, mix everything until thoroughly combined. The mixture will be very sticky.

    About 5 min

Cook’s note: If using your hands, lightly grease them with butter or oil to prevent sticking.

  4. 4

Spread the remaining graham cracker crumbs for the coating onto a large plate or a sheet of parchment paper.

    About 1 min

  5. 5

Divide the sticky mixture in half and, on a clean surface, shape each portion into a log about 5cm (2 inches) in diameter.

    About 3 min

  6. 6

Roll each log in the graham cracker crumbs until it is evenly coated on all sides.

    About 2 min

Cook’s note: Gently press the crumbs into the log to help them adhere.

  7. 7

Wrap each log tightly in plastic wrap or aluminum foil.

  8. 8

Refrigerate the wrapped logs for at least 2 hours, or until firm.

    About 2 hr

Cook’s note: Chilling is essential for the roll to set properly, making it easy to slice.

Keep it good

Storage

Store the tightly wrapped rolls in the refrigerator.

Reheating

Serve chilled directly from the refrigerator after slicing.
